This full-time, on-site Culinary Specialist prepares meals within Dundas Manor's Cook-Chill Production Program. The work covers standardized recipes, production schedules, food safety, quality control, and resident-focused dining. You will support safe, nutritious, appetizing meals while maintaining consistency, efficiency, and nutritional integrity.
Key Responsibilities:
- Prepare large-volume meals using standardized recipes and approved methods
- Execute cooking, rapid cooling, chilling, packaging, and storage procedures
- Maintain HACCP compliance and food safety requirements
- Monitor texture, flavour, appearance, and portion consistency
- Complete production, temperature, sanitation, and quality records
Requirements:
- Cook, Chef, Culinary Management, Red Seal, or equivalent certification
- Strong culinary knowledge and large-volume production abilities
- Understanding of food safety legislation and HACCP principles
- Knowledge of texture-modified food production and IDDSI preferred
- Ability to work Monday to Friday day shifts
